Makes 6 servings

Ingredients

  • 2 lbs. trout fillet, cut into 6 pieces
  • 3 tablespoons lime juice
  • 1 medium tomato, chopped
  • 1/2 medium onion, chopped
  • 3 tablespoons chopped cilantro
  • 1/2 teaspoon olive oil
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon red pepper

Preparation​​

  1. Rinse fish and pat dry. Place in a baking dish.
  2. In a separate dish, mix remaining ingredients together and pour over fish.
  3. Preheat oven to 375° and bake for 15-20 minutes or until fork-tender.
