Makes 12 servings


  • 2 1/2 pounds sweet potatoes
  • 2 teaspoons olive oil


  1. ​​Preheat oven to 425°F. Line a heavy baking sheet with aluminum foil.
  2. Peel the potatoes and cut into similar sized wedges, about 16 wedges per potato.
  3. Toss with the oil and coat with cooking spray. Arrange the potatoes in a single layer on the prepared baking sheet and roast until browned and tender when pierced with a fork, about 30 minutes. Serve immediately.
