Makes 4 servings

Ingredients

  • 1/3 cup chopped bacon
  • 1 cup sliced mushrooms
  • 1/4 cup chopped onion
  • 1/3 cup chopped carrot
  • 1/3 cup chopped celery
  • 3 cups quinoa cooked according to package directions
  • 1 teaspoon chopped garlic
  • 1/2 lemon juiced
  • 1 tablespoon chopped parsley
  • 12 16-20 count shrimp peeled and deveined

Preparation

  1. In a medium sized sauté pan cook bacon and reserve the drippings.
  2. Add mushrooms, onions, carrots and celery and cook until onions are translucent.
  3. Add shrimp and garlic. Sauté until shrimps are cooked. Add bacon drippings if needed.
  4. Add quinoa, lemon juice and chopped parsley. Combine well and add salt and pepper to taste.​​
