Ingredients

  • 3/4 cup butter or margarine, softened
  • 2 cups sugar
  • 3 eggs / or egg beaters equivalent to 3 eggs
  • 15-ounce can solid packed pumpkin
  • 1 1/2 teaspoons grated orange peel
  • 3 1/2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup chopped walnuts
  • 1 cup chopped fresh or frozen cranberries (or dried cranberries)

Preparation​

  1. In a mixing bowl, mix butter and sugar until creamy.
  2. Add eggs, one at a time, beating well after each addition. Add pumpkin and orange peel; mix well (mixture will appear curdled).
  3. Combine the flour, cinnamon, salt, baking soda and baking powder; add to pumpkin mixture, beating on low speed until moistened.
  4. Fold in walnuts and cranberries.
  5. Pour into two greased 8-inch loaf pans. Bake at 350°F for 65-75 minutes or until a toothpick comes out clean.
  6. Cool for 10 minutes before removing from pans to wire racks.
