Makes 4 servings

​Ingredients

  • 4 5-ounce filets of Atlantic salmon
  • 1 tablespoon butter
  • 4 artichoke hearts, halved
  • 2 teaspoons capers
  • ¼ cup sliced black olives
  • 1 cup lemon, squeezed​
  • 2 teaspoons chopped parsley
  • 1 tablespoon olive oil
  • Add salt and pepper to taste

Preparation

  1. ​​​​​​Brush salmon with olive oil and season with salt and pepper to taste.​​​
  2. Cook for 3-4 minutes on each side in a pre-heated pan.
  3. While salmon is cooking, melt butter in a medium saté pan. Add artichoke hearts, olives, and capers.
  4. Stir gently for 1-2 minutes then add lemon juice and parsley.
  5. Plate salmon and pour sauce liberally over filet.
  6. Serve with fresh steamed asparagus or vegetable of choice.
