Makes 8 servings​​​


  • 1 cucumber, diced
  • 1 clove garlic
  • ½ bunch chives, thinly sliced
  • ¼ bunch flat-leaf Italian parsley, chopped
  • 1 6-ounce container of strained Greek yogurt
  • Lemon juice to taste
  • Salt to taste


  1. ​​​Chop garlic and mix with generous pinch of salt.
  2. Mash the garlic and salt mixture with the flat side of your knife.
  3. Stir garlic paste, chives, parsley, and lemon juice with Greek yogurt until well combined. Stir in diced cucumbers.
  4. Serve with cucumber slices, roasted vegetables, or pita bread.​
