Makes 6 servings

Ingredients

BBQ Peach Marinade:

  • 3/4 ounce peach halves
  • 1/4 ounce light brown sugar
  • 2 1/4 teaspoons ketchup
  • 2 1/4 teaspoons white vinegar
  • 1/4 teaspoon minced garlic cloves
  • Pinch of ginger root, peeled and minced
  • Pinch ground black pepper

BBQ Peach Sauce:

  • 1 1/2 ounces canned peaches, sliced
  • 1/2 ounce light brown sugar
  • 1 tablespoon and 1/3 teaspoon ketchup
  • 1 tablespoon and 1/3 teaspoon cider vinegar
  • 1/4 ounce garlic, chopped in water
  • 1/4 ounce ginger root, peeled and minced
  • Pinch ground black pepper

Chicken:​​

  • 6 - 4 ounce boneless, skinless chicken breasts

Preparation

BBQ Peach Marinade:

  1. In blender or food processor, combine all ingredients and blend until smooth.
  2. Cover and coat all sides of chicken with marinade.
  3. Place chicken with marinade in covered shallow pans or sealable plastic bags.
  4. Refrigerate for 2 hours or overnight, turning twice while marinating.
  5. Drain chicken and discard marinade when ready to cook.

BBQ Peach Sauce:

  1. In blender or food processor, combine all ingredients and blend until smooth.
  2. Cover and keep chilled until serving.

Grill:

  1. Preheat grill to medium.
  2. Cook chicken until internal temperature​ reaches 165°F. About 4-6 minutes on each side.
  3. Heat sauce while chicken is cooking.
  4. Top each chicken breast with 1 tablespoon of sauce before serving.
